HERES WHY!
It has never been my dream to own a traditional restaurant; my heart has always been in building incubator spaces for artisans. Providing space for creatives is simply what I do. I did it years ago as a fashion designer and shop owner, helping launch brands/designers like Baggu, Lane Walkup, Megan Ladd and more. Now, that same ethos lives here in Waldoboro — just expanded into a broader creative community.
Over the past three years, we’ve hosted 14 incredible chefs and caterers for pop-ups and events. Josephine LaCosta (Elbows Catering), Wiley’s, Rachel Alexandrou, Elise Schlof (Soy Milk Maid), Brother Shucker, Yeti Boys, Double Grazie, Wishbone Coffee, Jolie Rogers, Shiftwood Pizza, Del Ziegman (Shoplifter), Hellenic Kitchen, Samuel Emery (Crooked Spoon Co.) and Finocchi – each one talented. Each one growing. After a little under two incredible years of collaborating, Crooked Spoon Co. — our most consistent collaborator— has taken the next step and opened their very own restaurant. We couldn’t be prouder of what they’ve built. It’s a perfect example of how two small businesses can grow side by side.
Running a small business in a historic building is no small feat. It’s trial and error. It’s listening. It’s pivoting. It’s preserving something old while trying to build something new. Many of you have seen me doing it all — hosting, bartending, cleaning, moving furniture, teaching workshops, waiting tables, painting walls, insulating, installing, failing, succeeding, laughing, and yes, sometimes tearing up. It’s not easy. But I wouldn’t quit for a day.
This season, we are expanding upon last year's partnership with Finocchi, a food project that focuses on the story & magic of food as they queer Italian and Italian-American traditions. They'll grow some of the produce and some in the Inn gardens, and plan to procure the rest from Waldoboro’s Landsmith Farm & Commons just down the road from the Inn.
I believe in lifting up our friends. I believe in alternative education — whether that’s a workshop or introducing drag performances to a small town. I believe small businesses should have a voice. And I believe we can build something meaningful together without relying on corporate fundraising platforms like GoFundMe or Kickstarter that don’t align with our values.
Our goal is to raise $18,000 to:
– Upgrade kitchen equipment to better support our pop-up chefs
– Improve our expo setup
– Cover hard liquor licensing fees
– Strengthen and elevate our bar program
And here’s the FUN part: every donation of $25 or more gets you something — even if you don’t win the raffle.
This isn’t just about equipment: it’s about continuing to create a space where chefs can experiment, artists can gather, performers can take risks, and our small town can experience something new.
